
Guess who got sick again?! I thought I was out of the weeds having had covid at the beginning of November. I forgot that the flu existed and over this past weekend my world was rocked with violent fevers and sore throat. Luckily the fevers only lasted for around a day, unfortunately the sore throat is lingering. It seems like everyone in the midwest has the same flu right now, so I figured I would share my soup recipe that is packed full of nutrients to help support your immune system!
I am not one for long recipe intros. Nobody wants to know about the generations of people this soup recipe has been passed down to. In reality, I made this recipe myself!
A quick little disclaimer before I share my recipe: I never measure anything. I never will when I cook. I am so sorry. I cannot change this about myself. My instructions are flexible and I think you should first use what you have on hand and second use the quantities that fit your liking.
That said, let’s go over the ingredients:
- Spinach
- Garlic
- Cabbage
- Carrot
- Lemon
- Green onion
- Apple cider vinegar
- Vegetable broth (1 container)
- A lot of water (filtered)
- Chili flakes
- Turmeric
- Ginger
- Pepper
- Paprika
- Dill
- Garlic powder
- Onion powder
- Lemon pepper
I use a huge pot and batch to make my sick time soup so I can focus on resting until I am feeling better! I grab a few handfuls of spinach, enough to cover the entire bottom of the pot and then I add in the entire container of vegetable broth. Broth has a TON of sodium in it, so to combat this I use about 4 cups of filtered water, since we use a lot of spices the water will not sacrifice any flavor.
Next I add in my apple cider vinegar and lemon juice- usually just a splash of both. From here I chop up a ton of cabbage, usually around ¼ of a head and add that in. Next I chop and add in one large carrot and a ton of green onion. As far as garlic goes, I add an unholy amount. I want the neighbors two blocks over to smell me. Since I am lazy I purchase already minced garlic and will use around 3-5 dollops.
As far as spices go, I like to use a generous amount of each one with an emphasis on the chili flakes as it helps clear out any congestion I am experiencing. I have no further advice, go with what you like and start light since you can always add more.
